THE GREAT HOUSE

The hilltop Great House is the central hub of the resort, and where each new guest is greeted with their famous Curacao-topped Blue Ocean cocktail and a cooling towel. It houses the main restaurant, bar, library and, if you must, work/conference center. On the lower level you’ll find a fully-equipped fitness center and small market/gift shop. Throughout the resort, you will walk or climb on cobblestone paths, and unexpectedly encounter socially inhibited donkeys.

The Great House Restaurant & Bar’s wrap-around terrace overlooks the main pool and sun deck, and offers views of the Atlantic Ocean and Caicos Bank. The restaurant’s dining menu changes each day for breakfast, lunch and dinner, and has a separate wellness section on each menu. 

There’s a wide variety of choices from quality seafood and meat dishes, which, along with fresh produce, is sourced from the nearby Caribbean nation of The Dominican Republic. The daily rotating menu offers classic culinary fare, such as sushi or surf & turf to filet mignon or braised pork belly, accompanied by a great wine selection. But, as the whole resort staff is culturally-diverse; you’ll also enjoy dishes influenced from the chef’s native cuisine, such as Thai.

TIP: If you see the French Onion Soup on the menu, do order despite the warm weather, you won’t regret it.

The restaurant bar is a great place to meet other guests at this intimate and friendly resort. It is also an excellent spot for Caribbean rum-based drinks or mocktails, and to take a mixology lesson where the Flaming South Caicos Martini becomes a spectacular creation.

From The Great House, you can arrange spa treatments or boating and fly-fishing adventures as well as a driver to drop you off at The Cove Restaurant & Beach Bar on Sailrock Beach.

BEACH LIFE

The sheltered Sailrock Beach along Caicos Bank offers smooth sand and tranquil waters, creating a serene escape. This idyllic stretch of shoreline is outfitted with sun loungers, standalone hammocks, and pavillon. Enjoy peaceful time on the water with complimentary non-motorized watersports, such as kayaks, paddleboards and Hobie Cats. 

It also serves as the location for the resort’s open-air Cove Restaurant and Beach Bar with covered bar and dining area. After a morning of sun-bathing and body-surfing, The Cove hits the spot with their Lobster Ceviche, Fish Tacos or Burgers with potato and/or sweet potato fries. 

On scheduled evenings, come here for the Beach Bonfire after a sunset dinner -perhaps of Lobster Pasta.  Under a clear night sky full of stars, nothing is better than roasting marshmallows over the crackling beach fire, and making S’ Mores for dessert.

OFF-PROPERTY EXCURSIONS

Discover the beauty of South Caicos on an ATV ride across Sailrock’s stunning property, including the residential neighborhood on the peninsula. Spot wild donkeys, local horses, ospreys, and iguanas as you take in breathtaking views.

Explore the sand bar from Jerry Camp, a small natural landing used as a launching point for kayaks, paddleboards, and small boats, located on South Caicos’ northern peninsula. The landing provides easy access to the stunning tidal creeks and the lagoon of the Bell Sound Nature Reserve. Connect with nature as you glide along, observing the migratory birds above and vibrant fish below.  At the full tide, water clarity is usually at its peak, and the blues, aqua, and turquoise hues are incredible. At lower tides, expansive sandbars, with pristine white sand, are exposed, which creates an other-worldly scenic setting.

Embark on an adventurous, yet relaxing South Caicos boating excursion, which weather permitting, will include snorkeling, or at least a visit to Iguana Cay.  Helmed by a local captain, his shipmate will ethically dive for conch, lobster, and reef fish. For your dinner, the fresh seafood catch will be expertly prepared by a talented resort chef as a gourmet feast in the comfort of your villa.

On my boat ride aboard a Carolina Skiff 26′, I joined my boat’s diver in the calm shallow water as he expertly and respectfully brought up starfish by hand for my observation. He later collected conch which became a tasty appetizer for my in- villa dinner later that night. 

The soft meat has a slightly rubbery texture, similar to calamari or squid.  My private chef prepared the Caribbean staple two ways as my appetizer –conch salad and conch fritters. This hefty starter was followed by a delectable main course of fresh mahi-mahi in a delicate lemon-butter sauce. Per his strong recommendation, chef ordered a chocolate lava cake for dessert to be delivered from The Great House kitchen.

VILLA LIFE

Sailrock offers the elevated Ridgetop Suites with panoramic views from their private wrap-around terraces, but we recommend opting for the “Villa Life”.

The resort’s beachfront villas are nestled on a bluff overlooking the untamed beauty of Long Beach, on the Atlantic Ocean side, with garden entry to the beach’s rugged, unspoiled shoreline. All villas feature a private pool and outdoor living room terrace, and are available with one to four bedrooms. During an early evening turn down service, the staff leaves a nightly treat on your bed.

The villa entryways lead to paved garden courtyards with outdoor table and chairs. Inside, you have a full kitchen, and full-size appliances such as refrigerator, washer and dryer. Large bedrooms have roomy closets and en suite bathrooms -plus, an enclosed outdoor shower and stone tub.

The great rooms have high-lofted ceilings and glass sliding doors that lead to the outdoor terrace and pool, where you’ll find comfy seating areas, in-pool sun loungers and free-standing rope hammocks.

TIP: Pack footwear for cobblestone paths and sandy beaches. 

WELLNESS EXPERIENCES

Outdoor yoga and meditation is offered, complimentary, at 7am on Tuesday, Thursday and Saturday on the resort’s Ridgetop Sky Deck platform. 

Even if you are not a morning person, do not sleep on getting a fantastic massage treatment at the Na Spa Pavillions. These spa huts have an open, yet curtained wall that looks out on the Atlantic. Excellent options, by expert hands, include Thai or Balinese massage. Whatever your choice, it comes with breathtaking oceans views and beneficial outcomes.
